1 egg

Instructions:

In a bowl, whisk together the gluten-free flour, ginger, cinnamon, cloves, baking soda, and salt.

In another bowl, beat the softened butter and brown sugar until creamy. Add the molasses and egg, and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until the dough forms.

Chill the dough for 1-2 hours.

Preheat your oven to 350°F (175°C).

Roll out the dough on a floured surface and use cookie cutters to create gingerbread shapes.

Place the cookies on a baking sheet and bake for 8-10 minutes.

In another bowl, mix the granulated sugar and vegetable oil.

Add the eggs and vanilla extract, and beat until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until the dough forms.

Chill the dough for 1 hour.

Preheat your oven to 350°F (175°C).

Roll the dough into small balls and coat them in powdered sugar.

Place on a baking sheet and bake for 10-12 minutes.

Divide the dough in half and roll each half into a rectangle.

Sprinkle ground cinnamon on top of one rectangle, then place the other rectangle on top.

Roll up the dough to create a log.

Slice into cookies and place them on a baking sheet.

Bake for 10-12 minutes until lightly golden.
